There are lots of things I love about fall. Cozy sweaters. Crisp air. The colours of the leaves changing. I really love all the ways fall rolls in. Not too cold and not too hot. But there is one thing I love most of all.
Harvest soups. Specifically my husband’s.
His soup is so good that when he makes it for his staff they all line up like Oliver Twist looking for seconds. True story.
And because I love it so much I thought I would post it here. Some people like to protect recipes like top secret documents but not me. I believe recipes - especially super delicious ones - should be shared. ♥️

Harvest Pumpkin Soup
I lb pumpkin (approx. 6 cups) or squash/ combination I medium potato (peeled and cubed)
I large onion (chopped) 3 cups stock (veg or chicken)
2 tbsp butter or oil 2 cloves garlic
½ tsp marjoram ¼ nutmeg powder
¼ tsp curry powder Salt and pepper too taste
1 tbsp lemon juice ¾ cup cream/milk (optional)
Parsley (garnish)
Melt butter/oil and sauté onion, garlic and potato until onion is transparent. Add pumpkin and sauté 2-3 minutes. Add stock and simmer for 45 minutes until pumpkin and potato are soft stirring occasionally. Add herbs and spices. Let cool slightly and then puree with hand blender or food processor. Add optional ingredients if you like. Serve with chopped parsley – enjoy!
